Anyone who's ever visited our café will have noticed that our cakes, breads, and other food are at least as delicious as our specialty coffees. Why is that? We make our products ourselves in our cafés or have them produced regionally, also using traditional methods, by the Bernauer bakery.
Finally, we've created a delicious banana bread recipe. Learn more about us and treat yourself to some delicious coffee and this easy recipe at home!

Baking as a traditional craft - discover our delicious baked goods

Of course, it's much easier for bakers to bake industrially, on an assembly line. But that's simply not our approach. We and the Bernauer bakery bake according to both traditional and newly developed recipes. We measure the quantities by hand, shape our loaves ourselves, and decorate our cakes with great care. The result is unique creations designed to brighten and sweeten your day. True flavor comes only from true craftsmanship, just like with our coffee .

Bernauer Bakery - Family bakery from Wilhelmsfeld

This bakery is steeped in tradition, and it's also a recognized member of the bakers' guild. It therefore embodies many values that we at SIMON & BEARNS truly appreciate:

Guild bakeries impress with their personality, variety, masterful craftsmanship, and passion. They place great emphasis on regionality and sustainability. Here, the owner might still personally carry the sack of flour through the bakery. These exceptional bakeries constantly create new, seasonal products thanks to their ingenuity. In doing so, they support the region and neighboring businesses, such as fruit growers. Master baker certification is mandatory for operating a guild bakery, and we think you can taste the difference! The Bernau bakery, by the way, is inspected by the German Bread Institute, thus confirming its high quality standards.

These standards of quality and craftsmanship are just as important to us as a coffee roastery. Of course, we can't source coffee regionally, but we support local coffee farmers . In doing so, we promote sustainable coffee cultivation and strengthen the economic conditions of the regions where our green coffee comes from. Our high standards of quality mean we share responsibility for ensuring that coffee cultivation and trade are fair for everyone involved. By holding ourselves to these standards, we encourage conscious coffee consumption among our customers. We strive to provide information about the origin of our coffee and our partners so that our transparent practices are rewarded! You show us every day what you like and how we can continuously improve. Thank you for your cooperation; you give us meaning in our work every day!

Baking at SIMON&BEARNS - Homemade baking craftsmanship

In fact, we even make some of our own pastries right here in our cafés. We think it's a wonderful way to show our customers how much we value them! We make everything with love! For example, we bake our banana bread, almond bars, and cheesecake fresh daily. This guarantees freshness and an unparalleled taste! For us, there's no better place to enjoy coffee and cake than in our cafés. We know where all our products come from, we know the farmers who grow our coffee, we trust our suppliers, and we pass all of this on to you, our customers. This ensures quality in every aspect! And it's always cozy here, too.

Here's what you need for our recipe:

200g flour (type 405 or similar)
80ml sunflower oil (or a similarly neutral oil)
2 medium-sized eggs
3 ripe bananas
110g brown sugar
3 tsp baking powder
1 vanilla bean or vanilla flavoring
pinch of cinnamon
pinch of salt

And here's how it works:

  1. Mash the ripe bananas in a bowl.
  2. Whisk the eggs with the brown sugar, mix in the oil, and then gradually stir in the flour, baking powder, salt, cinnamon, and vanilla. If you're using a vanilla bean, split it lengthwise and scrape out the seeds with a knife.
  3. Gently stir in the mashed bananas with a fork.
  4. Pour the dough into a suitable bowl.
  5. Heat the oven to 180 degrees Celsius (top/bottom heat) or 160 degrees Celsius (fan-assisted heat).
  6. Bake the banana bread for approximately 50-55 minutes.
  7. Enjoy!

As you can see, there's a lot going on behind our cafés and coffee roastery. What are your favorite snacks at our place? What would you like to see us offer? We'd love to hear your ideas and are always eager to try new things.
