Specialty Espresso
Specialty coffees and espressos are among the highest quality green coffee beans. The Specialty Coffee Association (SCA) uses a scale of 1 to 100, based on inspection, tasting, and specific guidelines, to determine that specialty coffee must have at least 80 points. This is where we speak of specialty coffee – and this is where our work begins. Even before the green coffee arrives at our warehouse, it has fewer than 5 defects per 300g. Green coffee defects include small scratches, broken, poor-quality, or damaged beans. We then test the green coffees to ensure they meet our important criteria through our gentle drum roasting process. We expect diverse aromas, soft acidity, a balanced body, sweetness, and simply that certain something. It is important to us to communicate transparently about where we source our specialty coffees and to know the respective coffee farmers personally. These opportunities often arise here in Germany, but social media also gives us the chance to be closely involved in cultivation, harvesting, drying processes, and imports.
Our roasting process
The drum roasting method was invented as early as the 16th century and still makes our work a true craft today. The gentle heating process gives the green coffee beans ample time to develop their more than 800 aromas. The rotating drum ensures an even roast and a distinctive, low-acid flavor. At Simon & Bearns, we generally roast our espressos lighter, as this preserves more of the original, natural aroma. This also allows us to guarantee that our espressos don't become oily and thus distort the flavor.

For a fruity single espresso, we offer our Espresso Stellwerk 5 - Blend . The coffee beans from Rwanda lend this espresso a very distinctive flavor. Our Espresso from Brazil (São Silvestre), processed using a natural method, also boasts fruity aromas and is therefore ideal as a single espresso. With our Espresso Bahnstadt Blend , we've created a classic espresso blend. 20% Robusta ensures that even in a cappuccino, a robust coffee flavor is still noticeable.
Preparation of our espressos
Like any espresso, the preparation method is a matter of taste. Each method has its own unique characteristics, and the best way to find out what you like is to experiment. In cafés, espresso is primarily prepared using a portafilter machine. Here, the ground espresso is forced through a filter basket with high pressure and hot water, creating a distinctive crema. Of course, portafilter machines are also available for home use. If you have any questions about whether this is right for you, we'd be happy to advise you based on our knowledge of different machines. A traditional method for preparing espresso is using a stovetop espresso maker. Here, the espresso is also made using pressure, but the hot water is forced from below through the ground espresso and two different filters. A unique crema forms beneath the characteristic bubbling of the stovetop espresso maker. An unparalleled way to start the day. The quickest way to conjure up your espresso is at the touch of a button with a fully automatic machine. The machine usually takes care of all the steps: the whole beans are ground, the espresso powder is tamped, and once again, high pressure forces hot water through it. A fine crema forms thanks to specially integrated "crema valves," and your espresso is ready.
