"Roasting coffee is like composing my own melodies for me."
Hello ladies and gentlemen. I am Victor and I come from a small town near Madrid called Alcalá de Henares. In July 2017 I completed my Master's degree in bassoon at the Mannheim University of Music and Performing Arts.
To finance my studies, I worked in various cafes in the region. Initially, my duties were limited to washing dishes. However, I quickly learned what makes a good barista and realized I had a talent for preparing coffee. A few weeks later, my time as a dishwasher was over, and nothing stood in the way of my career as a barista.
My love and passion for coffee were awakened and grew ever stronger. I started roasting coffee and developed a feel for how to make something special out of raw coffee beans.
WHY AM I PART OF SIMON & BEARNS?
Playing music demands passion, creativity, and precision in equal measure – that's precisely what I enjoy and what constantly presents me with new challenges. The same is true for the art of coffee, whether roasting or brewing. The question will surely arise as to why I don't prefer playing in an orchestra. At SIMON & BEARNS, I am the composer myself – from developing the roasting profiles to creating the perfect cup.

He also possesses extensive coffee knowledge, which is extremely important for SIMON & BEARNS to establish themselves in the market. He's not just a business partner, but also a good friend.
