La Unión - On the origin of coffee
"La Unión" is an ode to collaboration. Along the coffee value chain, across national borders and oceans, but also within a village and among family members: nothing is possible without teamwork. That's why Germán named this batch "Unión," symbolically uniting the Marsellesa and H1 varieties. H1 is a high-yielding, high-quality variety. Marsellesa, on the other hand, is a hybrid variety with excellent acidity in the cup. Both exhibit good resistance to coffee rust. After five days of anaerobic fermentation, a creamy, very sweet coffee was produced.
