The cherries for this exceptional coffee are carefully hand-picked and processed within just eight hours. They then undergo a dry, anaerobic fermentation for 90 hours before being gently shade-dried. At an ideal residual moisture content of 11.5%, the beans rest for several weeks to fully develop their aroma. Only then are they extracted from the cherries – resulting in a coffee that impresses with its meticulous care, time, and passion.
